Salmon - Quick and Easy!
Salmon steaks that are a little on the thin size as far as thickness. Prep: lightly coat on both sides with olive oil, salt and pepper. Add a tad of olive oil to a non-stick frying pan and then add the salmon. I dribbled some Trader Joes "General Tsao Stir Fry Sauce" across the top. Cook 4-5 minutes on each side, turning once.
While the salmon is cooking - place a 1/2 bag of baby spinach in a microwave safe baking dish with a small amount of water for about 3 minutes. Drain water and set aside. This is will be used to lay under the fish when served.
The veggie combo is a nice compliment to the salmon. It is microwavable in its own pouch.
The salmon is served with a bed of spinach under it, with the veggies. A quick and easy dinner that is delicious.
