Faux Mashed Potatoes

You will need one of those cauliflower heads that you see in the market, and have no idea what to do with. Chop it up and cook it till tender, either on the stove in a saucepan or in the microwave - till fork tender.
4-5 Yukon Gold or Klondike Goldust potatoes, slice and cooked till fork tender - same thing - either on the stove or in the microwave.
Put the cooked cauliflower and potatoes and 1/2 C each of lowfat buttermilk, and lowfat milk, salt and pepper - and you could add a couple of teaspoons of crushed garlic into a food processor and press the butter till creamy, yummy delicious. When ready to serve, place mixture in a microwave safe container with a pat of butter and heat for 2 minutes and serve with your favorite entree and veggie. Really good the first night, but not so much as leftovers, as you could really taste the cauliflower, and I didn't want to.
We had a lamb roast, asparagus and our faux potatoes - a low fat meal that we both enjoyed!
