Pork Hash - Husband Approved

Pork Hash, made with a leftover Pork Roast.  Easy to make and yummy to eat.  Husband Approved.

Chop a Sweet Onion and saute on medium with about a couple of tablespoons of Olive Oil, till the edges are a caramel color.

This asparagus was really thin, so I used 2 bunches, cut into 1" pieces; microwave in a glass bowl for 2 minutes, set aside.

Cut into cubes and sprinkle with Kosher Sea Salt and Pepper

The onions should be looking like this by now.  For caramelized onions - add 1 Tab butter, and sprinkle a teaspoon of sugar over the top, being careful to mix it in well.  

Set aside a portion of the onions, and add the pork

Add the asparagus, remaining onions and continue cooking till the meat is hot.

For a simple sauce/gravy - combine 2 Tab flour with a cup of water, and a couple of shakes from the pepper mill - cover top and shake well.  You can even add some Chicken broth to the mix.  Pour slowly over mixture and stir.  Savory and yummy.  I served it with Uncle Ben's Chicken rice and pears.

Easy Pork Roast with Sage

Easy Pork Roast.  These are both really small roasts about 8" long and fit into my smallest roasting pan.  I seasoned them on all sides with Kosher Salt, Garlic and Pepper and a Organic No-Salt Seasoning from Costco.  I cut one inch deep slits across the top and inserted a sage leaf in each one.  Baked it in the oven for about an hour, or till the meat thermometer reaches 160 or so.
Sliced pork roast, Uncle Bens rice in a bag (microwave) and roasted carrots.

Pork Chops with Cider and Apples

Pork Chops with Cider and Apples
was in the OC Register on 1/6/11, and this is my modified version of their recipe
makes 4 servings
1 T olive oil
4 center-cut pork chops - 6-7 oz each
3/4 t kosher salt
ground pepper
½ of a sweet onion, chopped
1 clove of garlic, chopped
2C apple cider
2 apples, peeled and sliced
3 T half n’half
2 t Grey Poupon Country Dijon Mustard


Heat olive oil in a large skillet over medium heat; season chops with salt and pepper.  Cook chops in skillet, turning once, until browned, about 10 minutes.  Remove from skillet and set aside.
You might need to add more olive oil to the skillet, just a tad.  Add chopped sweet onion and cook over medium heat, adding the garlic in the last couple of minutes to blend flavors.  Add cider and apple slices and heat to simmer covered.  The cider should reduce to about half, in about 10 minutes.  Stir in cream, mustard and 1/4 t salt; cook until slightly thickened. Taste sauce for seasoning.  Return chops to skillet and heat till cooked through with the lid on the pan, about 10 minutes.

Easy and Delicious Pork Chops

Easy Pork Chops...trust me.
4-6 thin pork chops
1 small sweet onion
1/2 lb sliced mushrooms
1 can cream of chicken soup or cream of mushroom soup/water
salt and pepper
olive oil
you could also add a green veggie to this mix for a one-dish meal
