I added about a 1/2 lb of sliced mushrooms, just when the onions began to brown on the edgesAs the mushrooms cook, add the green beans with just a little more olive oil and a sliver of butterThen I threw caution to the wind and added 3 cups of fresh spinach - with a sprinkle of olive oil to cook on the side of the pan. When it is cooked down, mix it in with the other veggiesAn excellent side dish to steak, leftover mashed potatoes (made with cauliflower and potatoes) - yummy good and filling.
Yum! Looks great! I love the "faux-tatoes": we eat them quite a lot.
