Tired of the same old zucchini recipes? Try this one!

Cheesy Garlic Zucchini Bread

Serves: 4 mini loaves or 1 large loaf
Ingredients
  • 3 cups all purpose flour
  • 4 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon garlic powder
  • 1 cup shredded zucchini
  • ¾ cup shredded cheddar cheese
  • ¼ cup of finely chopped green onion
  • 1 Tablespoon fresh dill (or 2 teaspoon dried dill)
  • 2 large eggs
  • 1 cup buttermilk
  • 4 tablespoons (1/2 stick) of butter, melted
Instructions
  1. Preheat oven to 350 degrees. Grease a regular size loaf pan (9x5 inch) or 4 small loaf pans.
  2. In a large bowl add the flour, baking powder, salt, baking soda and garlic powder. Whisk to combine. Add the zucchini, cheddar cheese, green onion and dill. Stir together.
  3. In separate small bowl, combine the eggs, buttermilk and butter.
  4. Pour the wet ingredients to the ingredients in the large bowl. Gently stir together just until moistened.
  5. Pour into loaf pans and bake. One large loaf should take about 50 minutes or until a toothpick inserted comes out clean. Or bake 4 mini loaves for about 20-25 minutes or until a toothpick comes out clean. Let cool for 10 minutes. Remove from pan to cool completely or serve warm.

Spicy Honey-Garlic Roasted Cauliflower


Another day, another side dish.
This one’s epic.
So epic I will go as far as saying that this might be one of my favorite ways to enjoy cauliflower.
Which is kind of a big deal to me.
Because as you might know I eat a lot of cauliflower, like a LOT — to the point where I crave it like an addiction.

There are many delicious ways to cook cauliflower, but I believe that roasting is by far the best.
When you roast cauliflower, it becomes tender and caramelized. Roasting elicits a natural sweetness that is to die for.
The bonus is that it doesn’t smell at all like when it’s boiled or steamed.
Priceless.

Spicy Honey-Garlic Roasted Cauliflower


This Spicy Honey Garlic Roasted Cauliflower is so delicious, I’d be happy to eat it straight from the oven. Honestly, is there any other way to eat it?
Slightly spicy, slightly sweet, considerably awesome.
The best part about this recipe is how easy it is to make. There’s just some chopping, some measuring out the ingredients, but you let the oven do the rest of the work.
This is a side dish that's bound to turn the heads of family and friends.

Spicy Honey-Garlic Roasted Cauliflower                                                                                    Print this recipe!

Ingredients
Serves 4 as a side

½ head of cauliflower, cut into bite-sized florets
4 tablespoons honey (preferably mild-tasting)
2 garlic cloves, minced
1 teaspoon onion powder
1 ½ tablespoons soy sauce (or coconut aminos)
½ tablespoon Sriracha (make your own Sriracha with this recipe)
1 tablespoon arrowroot powder (or cornstarch)
6 tablespoons cold water

Directions

Preheat oven to 400°F (200°C) and place a rack in the middle.
Spread cauliflower florets in an even layer on a rimmed baking sheet. Drizzle over 1 tablespoon of olive oil and sprinkle with coarse salt and pepper. Roast in the oven for 10 to 15 minutes or until the cauliflower start to caramelize, turning once.
In the meantime in a small saucepan combine honey, garlic, onion powder, soy sauce, and Sriracha. Bring to a simmer over low heat stirring constantly.
Combine arrowroot (or cornstarch) and water in a small bowl until completely dissolved.
Stir in the sauce and cook until the sauce thickens, about 2 minutes. If it’s too thick, thin it out by adding more water, one tablespoon at a time,
When the cauliflower is done, transfer to a large bowl and pour the sauce over it. Toss the cauliflower in the sauce to coat.
Return to the baking sheet and roast for an additional minute, so that the cauliflower can absorb some of the sauce.
Serve warm!

Dining Out / QuiltCon in Pasadena

I am often asked how I choose the restaurants to dine at when I am traveling.  So, today I am sharing one of my plans when I drove to Pasadena for QuiltCon in February.
First, I draw a very rough map of the area.  How far from point A to point B?  Mainly my hotel and the convention center. How far to walk, how far to take a shuttle?  I use Google Maps on my iPhone when I travel, so I know where I am going and it will tell me how far it is by car or by walking

Now for the list of places that interest me.  I find these through Yelp using the search "farm to table" because I want to eat the freshest foods.  I find they are the most delicious.  After the choices are narrowed down, like for dinner places, I use Open Table to get a reservation.  We also ate at Wahoo's Fish Tacos and PF Chang's.
The Meat District is where we dined on Thursday night. We took the hotel shuttle.  Their memus are in the shape of cleavers!  The boast of having the best burger.  I ordered mine medium, it came crawling off the plate. That's how they like to serve it. It didn't cut the mustard.  No real 'meat' flavors, because in my humble opinion, it wasn't cooked enough.  Salt would have been good.  Those bones in the middle?  Bone marrow. I didn't order them, but they tasted like fish, which can't be good.  Were they stored next to fish in the frig? I don't recommend this restaurant.  The service was good though.

This restaurant wasn't on my list, because some friends recommended it. Dog Haus - with a great selection of hot dogs - all kinds - great selection.  A nice outside patio and within walking distance to the Pasadena Convention Center. It's in Old Pasadena - around the corner is Blick Art Supplies.  I can't remember today what was on my dog, but it was utterly delicious.  Good fries, tatertots and sweet potato fries.  I would highly recommend this restaurant.  Come to find out there are two of these restaurants near me in Orange County, CA.  Hot dogs!

A longer walk that first realized, but such great scenery along the way and the lunch was oh so delicious and fresh. They have wonderful salads, you can have meat added, and lovely veggie sides. I had one of the most delicious cookies there (white chocolate and cranberry).  Tender Greens - and they have many other locations, which I am happy about.

This was a great find.  Azeen's Afghani restaurant, on Yelp, of course.  A small and intimate restaurant with great service, larger portions to share and the food was divine!  We had a table of 7 people who could talk easily and hear ourselves. Great setting.  A car ride away from our hotel.
